Selecting raw materials is the first and most crucial step in making brined mushrooms, directly determining the quality of the final product. Taking button mushrooms as an example, prioritize selecting mushrooms with a cap diameter between 3 and 6 centimeters. At this stage, the mushrooms are in their prime growth phase, resulting in the firmest and most tender texture. The caps should be intact, smooth, and free from any spots, diseases, or pest damage. A pure white color is not only a symbol of quality but also ensures the brined mushrooms maintain an attractive appearance after processing. The stem length should be moderate, generally between 1 and 2 centimeters, thick, and firmly attached to the cap. This structure ensures the mushrooms do not break easily during processing.
For shiitake mushrooms, their unique flavor and appearance are key selection criteria. The caps should be thick, ideally 5-8 centimeters in diameter, with clear brown patterns and a natural sheen. The intensity of the shiitake mushroom's aroma is also an important indicator of quality; high-quality shiitake mushrooms will have a rich aroma even during selection. The gills should be tightly arranged, light yellow to white in color, without any signs of blackening or mold. In actual production, some large-scale brined mushroom processing plants employ professional quality control personnel who, with their extensive experience and keen observation skills, rigorously screen each batch of mushroom raw materials, ensuring that only mushrooms meeting the standards proceed to the subsequent processing stages.
