How to Clean and Pre-treat Saltwater Mushrooms

Cleaning is a crucial step in removing impurities and microorganisms from the surface of mushrooms, directly impacting product hygiene and safety. Common cleaning methods include rinsing under running water and soaking. When rinsing, place the mushrooms under running water, ensuring the flow is gentle to avoid damaging their structure. For stubborn impurities like dirt and dead leaves, gently brush them with a soft brush. Soaking involves immersing the mushrooms in water containing a suitable amount of salt or baking soda for 10-15 minutes. Salt has antibacterial properties, while baking soda effectively removes slime and impurities from the mushroom surface. After soaking, rinse thoroughly with clean water. In modern production workshops, ultrasonic cleaning technology is also used. The high-frequency vibrations of ultrasound further remove tiny impurities and microorganisms from the mushroom surface, improving cleaning efficiency and quality.

Pre-treatment operations, such as slicing and dicing, also significantly affect subsequent processing. When slicing, the thickness should generally be controlled at 0.3-0.5 cm. This ensures sufficient penetration of the brine while maintaining the mushroom's shape and texture after pickling. For chopping, cut the mushrooms into uniform pieces as needed for easier packaging and consumption. Pre-treated mushrooms should be moved to the next processing stage as soon as possible to avoid prolonged storage that could lead to oxidation, discoloration, or microbial growth.
