1. Variety differences:
Mushrooms of different varieties have different tissue structures, textures, etc. For example, the cap of shiitake mushroom is relatively thick and the flesh is tight, while the cap of oyster mushrooms is relatively thin and slightly loose. This difference will lead to different absorption and transfer speeds of heat during the killing process, and the required killing time and suitable killing conditions are also different. Generally, thick-textured shiitake mushrooms may require a slightly longer killing time and a more stable high-temperature environment than oyster mushrooms to ensure the ideal killing effect.

 

2. Mushroom size:
Mushrooms vary in size. The internal tissues of larger mushrooms are farther from the surface, and it takes longer for heat to transfer to the center. When killing, compared with smaller mushrooms, large mushrooms may need to extend the killing time appropriately to ensure that their internal tissues can also be fully heated to achieve the purpose of killing, such as destroying enzyme activity and killing microorganisms. Otherwise, the surface of the large mushroom may be killed, but the interior is still not fully processed, affecting the overall killing effect.

1. Different fixing equipment will affect the fixing effect by heating methods and heating uniformity. For example, ordinary pots on traditional stoves may have local overheating or uneven heating problems, resulting in inconsistent fixing degrees of mushrooms at different positions in the pot. Professional fixing machines usually use advanced heating technology to achieve more uniform heating, which is more conducive to ensuring the overall fixing effect of mushrooms. In addition, the capacity of the equipment is also important. If the equipment capacity is too small, putting too many mushrooms at a time will cause accumulation and affect the uniformity of heating; if the capacity is too large, the heat distribution may not be concentrated, which is also not conducive to the fixing effect.

 

2. The heating power and temperature control accuracy of the equipment are also important. Insufficient heating power may not be able to quickly heat the water to the required boiling temperature, or it may be difficult to maintain a stable high temperature during the fixing process, affecting the fixing efficiency and effect; poor temperature control accuracy may cause the actual water temperature to fluctuate greatly, deviating from the appropriate fixing temperature range, resulting in excessive or insufficient fixing of mushrooms.

1. The ambient temperature of the withering operation has a certain impact on the effect. In a low-temperature environment, the boiling point of water may be slightly lower, and the heat loss is relatively fast. It is necessary to appropriately extend the withering time or strengthen the heating measures to ensure the withering effect in a normal environment. On the contrary, in a high-temperature environment, the boiling point of water may be slightly higher, but it is also necessary to prevent the equipment from having difficulty in heat dissipation due to excessively high ambient temperature, and problems such as local overheating.

2. Good ventilation conditions help the equipment dissipate heat, maintain the normal operating temperature of the equipment, and avoid equipment failure or the withering effect due to poor heat dissipation. For example, if the withering operation is carried out in a small space with poor ventilation, the equipment may affect its heating performance due to overheating, which in turn affects the withering of mushrooms.
