Unveiling the Mystery of Brine Mushrooms

Brine mushrooms, also known as salted mushrooms, are a type of edible fungus that has been pickled in brine. This unique processing method not only extends the shelf life of the mushrooms but also preserves their delicious taste and rich nutritional value, making them important in the food industry and daily life.

In terms of morphological characteristics, brine mushrooms largely retain the original shape of fresh mushrooms, with only a slight change in color due to pickling, typically ranging from pale yellow to a light yellowish-brown. Their caps are rounded with neat edges, clearly defined gills, and a thick stem tightly connected to the cap. The texture is firm yet elastic, and soaking in brine adds a unique texture.

Common varieties used to make brine mushrooms include button mushrooms and shiitake mushrooms. Button mushrooms are the most common, with caps typically ranging from 3 to 15 centimeters in diameter, a smooth surface, and a color ranging from white to light brown. This type of mushroom has thick, fleshy flesh, a delicious flavor, and is rich in nutrients such as protein, polysaccharides, vitamins, and minerals, making it a high-quality raw material for making salted mushrooms. In Jiangsu, Zhejiang, and Fujian provinces of my country, the cultivation of button mushrooms is extensive, providing an ample supply for salted mushroom processing.

Shiitake mushrooms are also an excellent choice for making salted mushrooms. They have a unique aroma, a brown cap with irregular cracks on the surface, and a diameter typically between 5 and 12 centimeters. Shiitake mushrooms are rich in lentinan, various amino acids, and vitamin D, making them highly nutritious. In Hubei, Henan, and Shaanxi provinces, shiitake mushroom production is considerable, and many local enterprises process them into salted mushrooms, selling them throughout China and even exporting them overseas.
