2. Nutrient content: During the drying process of dried mushrooms, some vitamins and other nutrients may be lost to a certain extent, but the content of protein, minerals, etc. is relatively stable; salted mushrooms better retain most of the nutrients of mushrooms, including vitamins, etc.
3. Convenience of use: Dried mushrooms need to be soaked before use, and the soaking time varies depending on the type and degree of drying of the mushrooms, generally taking several hours; while salted mushrooms usually only need to be simply washed and used directly, which is more convenient.
Comparison with quick-frozen mushrooms:
1. Processing technology: Quick-frozen mushrooms are made by washing, grading, quick freezing, and other processes of fresh mushrooms. The main purpose is to maintain the freshness and nutrients of mushrooms through low-temperature rapid freezing; while salted mushrooms are pickled to extend the shelf life.
2. Taste: After thawing, the taste of quick-frozen mushrooms is closer to that of fresh mushrooms, maintaining a certain degree of crispness and tenderness; the taste of salted mushrooms has a unique salty and fresh flavor due to pickling, and the texture is relatively firmer.
3. Storage conditions: Quick-frozen mushrooms need to be stored in a low-temperature frozen environment, generally requiring a temperature below - 18°C; while salted mushrooms only need to be stored in a cool, ventilated environment at 0°C - 10°C.
