Sensory indicators:

 

1. Appearance: Saltwater mushrooms should have the shape and color of this variety of mushrooms, with complete caps, no obvious damage, spots mold, etc.

 

2. Taste: The texture should maintain a certain degree of crispness and tenderness, without softness and rot, with the flavor of the mushroom itself, and no peculiar smell.

 

3. Impurities: The product should not contain visible impurities such as soil, sand, insect remains, etc.

Physical and chemical indicators:

 

1. Salt content: It should comply with the relevant standards, generally between 12% - 18%. Too high or too low salt may affect the quality and taste of the product.

 

2. Heavy metal content: The content of heavy metals such as lead, mercury, cadmium, and arsenic must be strictly controlled below the national safety limit to protect the health of consumers.

 

3. Moisture content: Usually around 85% - 90%. The appropriate moisture content helps to maintain the texture and stability of the product.

Microbiological indicators:

Microbiological indicators such as total colony count and coliform group must meet food hygiene standards, and no pathogenic bacteria such as Salmonella and Staphylococcus aureus should be detected to ensure product safety.
