Suitable Refrigeration Temperature
The most suitable refrigeration temperature for Brine Mushroom is 0 - 4℃. Within this temperature range, the growth and reproduction rate of microorganisms will be significantly slowed down, and the activity of enzymes will also be reduced, thereby extending the shelf life of pickled mushrooms. For example, placing pickled mushrooms in the refrigerator of an ordinary household refrigerator and setting the temperature to about 2 - 3℃ can keep the pickled mushrooms in good quality for several months.
Humidity Control of Refrigerated Environment
The relative humidity of the refrigerator refrigerator is generally around 70% - 80%, which is more suitable. If the humidity is too high, water droplets may appear on the surface of the packaging, which may easily cause the packaging material to become damp, thereby affecting the sealing. Some desiccants (such as silica gel desiccant) can be placed in the refrigerator to absorb excess moisture and keep the environment dry. In addition, avoid placing pickled mushrooms near the air outlet of the refrigerator, because the airflow speed there is fast, which may cause the moisture on the surface of the packaging to evaporate too quickly, causing the pickled mushrooms to lose water and shrivel.

When placing pickled mushrooms in the refrigerator, be sure to place them in a stable position to avoid tilting or shaking. If using glass jars, prevent the jars from colliding with each other and breaking. At the same time, try to store pickled mushrooms separately from other foods with strong odors (such as durian, garlic, etc.) to avoid odor contamination and affect the flavor of the pickled mushrooms.
