Ingredients: moderate mushrooms, moderate water
Methods/steps
1. Add 1 gram of sodium pyrosulfite to 5000 grams of water, then pour in 5000 grams of fresh mushrooms and soak for 10 minutes. Remove.
2. Rinse with clean water several times, pour in 10% brine solution, boil for 8 minutes, remove and rinse with cold water.
3. Add another 1500 grams of refined salt, layer by layer into the mushrooms into the tank, marinate 2 days after another container.
4. Add 110g salt to 500g water, boil and dissolve to cool. Add 10g citric acid to mix and pour it into the container.
5. Put it into a container, cover it with a lid 10 days later, and then a few days later, it will become brine mushroom.
