Choice of sealed packaging materials
Glass containers:
Glass jars are one of the ideal choices for keeping Brine Mushroom fresh. It has good air tightness and chemical stability, and can effectively prevent the entry of outside air and microorganisms. When choosing a glass jar, make sure the lid of the jar is well sealed, preferably a screw-top glass jar with a rubber seal. For example, a wide-mouthed Mason jar, with its thick glass material and tight sealing design, can provide a stable storage environment for pickled mushrooms.
Plastic packaging:
If you use plastic containers or packaging bags, you should choose materials with high barrier properties. For example, PET (polyethylene terephthalate) plastic bottles or composite plastic film bags. PET plastic bottles have high transparency, allowing consumers to see the appearance of the product, and they have a certain barrier to oxygen and water vapor. Composite plastic film bags are usually made of multiple layers of different materials, such as PE (polyethylene), EVOH (ethylene-vinyl alcohol copolymer), etc., among which the EVOH layer can effectively block oxygen and extend the shelf life of pickled mushrooms.
Metal packaging:
Metal cans (such as tinplate cans) are also a good choice. Tinplate cans are extremely airtight and can block light, air, and moisture. Their hard material can also protect the pickled mushrooms from physical damage during transportation and storage. However, metal cans are prone to rust, so they need to be properly coated on the inside, such as epoxy phenolic coating, to prevent chemical reactions between the can and the pickled mushrooms.
Pre-packaging treatment
Before packaging Brine Mushroom, make sure the pickling liquid on the surface of the mushrooms is drained. Too much pickling liquid may cause too high humidity in the package, which can breed bacteria and mold. You can place the pickled mushrooms on a strainer and drain them naturally for 10-15 minutes. In addition, for glass jars and metal jars, you can spread a layer of dried herbs or spices (such as dried rosemary, dried peppercorns) on the bottom of the jar. These herbs and spices can not only absorb excess moisture, but also add extra flavor to the pickled mushrooms.
Vacuum packaging technology
Vacuum packaging is a very effective way to preserve freshness. By extracting the air in the package and reducing the oxygen content, the growth of aerobic microorganisms and the activity of enzymes are inhibited. For Brine Mushroom, a professional vacuum packaging machine can be used for packaging. During the vacuum packaging process, attention should be paid to the pressure resistance of the packaging material to avoid the package from breaking during the vacuuming process. Generally speaking, composite plastic film bags have good pressure resistance and are suitable for vacuum packaging. In addition, some vacuum packaging machines can also be filled with inert gases such as nitrogen to further improve the preservation effect. Nitrogen can prevent the pickled mushrooms from being oxidized, and it can also make the package fuller and prevent the mushrooms from being squeezed during transportation.
